The Zuni Cafe in San Francisco eliminated tipping a year ago. Despite the pushback, it won’t bring them back.
More than a year after the Zuni Café implemented a mandatory service charge in lieu of tipping, restaurant owner Gilbert Pilgram said he has no plans to revert to the old model despite the refusal of employees.
A number of Zuni Café employees told the San Francisco Chronicle that the move made it difficult to make ends meet without the help of tips and that they had “reached the point of discussing a walkout or a unionization to pressure Zuni,” the Chronicle. reported. (SFGATE and the San Francisco Chronicle are both owned by Hearst but operate independently of each other.)
